To make this drink you first need a shot of coffee. Then we need milk. Not just any milk. There are three types of milk: UHT, fresh pasteurised and raw. The first type has been sterilised at 135 degrees for 3 seconds. It has a high best before date but this process removes sugar and protein. Pasteurised milk, on the other hand, has a shorter best before date but is sweet and high in protein. Raw milk has a very short best before date, has a strong taste that may not appeal to everyone. Which one to choose and why? It is important to select pasteurised whole milk. Pasteurised because it is rich in protein and whole because it contains fat. It is the proteins and fats that allow the milk to foam and maintain a good texture.
